POULTRY

Coq Au Vin - Chicken breasts baked in white wine and chicken broth. Topped with Parmesan cheese.

Chicken Thighs with Tomatoes, Olives and
Capers -
Boneless chicken thighs simmered with diced tomatoes, kalamata olives and capers.

BEEF
Beef Burgundy -
Tender cubes of beef are stewed in a burgundy wine sauce with onions, carrots and mushrooms.

Pepper Crusted Beef Tenderloin of Beef - Tender beef tenderloin is encrusted with fresh ground black pepper, orange zest, garlic and fresh rosemary. Served with pearl onions.

PORK
Pork Tenderloin with Chinese Ginger Lemon Sauce -
Tender pork tenderloin with a delicious ginger lemon sauce.

Pork Piccata - Coated with Italian seasonings and topped with a lemony chicken broth sauce with capers.

LAMB
Traditional Lamb Stew -
Tender chunks of lamb stewed in a light herb sauce with onions, carrots and potatoes.

Broiled Spiced-Rubbed Lamb Chops - Tender lamb chops broiled with a garlic, cumin, coriander, cinnamon, cloves and a red pepper rub.

FISH & SEAFOOD
Herb Coated Tilapia with Lemon -
Tilapia fillets are coated with lemon zest and fresh herbs, such as parsley, thyme, mint, chives or cilantro.

Roasted Salmon with Citrus Herbs - Salmon baked with a fresh parsley and thyme, garlic, lemon and sea salt rub. Absolutely wonderful!

Shrimp Marinara - Shrimp prepared in a delicious tomato sauce. Spaghetti is a suggested side dish.

PASTA
Sausage Cheese Manicotti - Manicotti stuffed with three kinds of cheeses, turkey Italian sausage and spinach. Topped with spaghetti sauce.

Ravioli with Tomato-Basil Sauce - Cheese-filled ravioli served in a tomato and basil sauce with sliced onion and yellow peppers.

 

Side Dishes:
VEGETABLE

Herbed Yellow Summer Squash with Parmesan - Fresh chives, parsley, basil and rosemary is baked with yellow summer squash, tomatoes and red pepper. Topped off with parmesan cheese.

Sunshine Carrots - Fresh carrots in an orange ginger sauce.

POTATOES
Potato Gorgonzola Gratin -
Potatoes are layered in Gorgonzola cheese sauce. Fontina or Monteray Jack cheese can be substituted for the Gorgonzola cheeses, if desired.

Stuffed Baked Potatoes - Stuffed with green onions, bacon and cheddar cheese.

RICE
Oriental Fried Rice - Traditional fried rice with chicken, beef or pork, napa cabbage, snow peas, shiitake mushrooms, bean sprouts and an egg. Good with white or brown rice.

Parmesan Couscous - Couscous with parmesan cheese, a hint of garlic and a pretty color from green onion and pimientos.
